This Ultimate Veggie Burger tops all veggie burgers ever created. It is everything a vegetarian burger should be, piled high with fresh veggies, creamy avocado, sauce, TWO hearty black bean patties, more sauce, yam chips, roasted mushrooms and a softly toasted bun. It is hearty, crunchy, juicy, fresh, crispy – are you drooling yet? A combination of basically a salad-in-a-burger makes this burger extra special. The maple tahini dressing is the cherry on top, combining sweet and savoury together to give this burger some serious swag’. Pair it with some home-baked yam fries and a beer and you’ve got yourself the best comfort meal there is – a true North American classic!

Prep time: 20 mins
Cook time: 15 mins
Total time: 35 mins
Serves: 6
Ingredients
- For the patties:
- 1 cup walnuts
- 1 can of cooked black beans (about 1.5 cups)
- 1 small head of cauliflower
- 1/2 bunch of cilantro
- 1 celery stalk
- 1 small yellow onion
- 1 garlic clove
- 1/2 of a small zucchini
- Various spices: we used a good few shakes of steak seasoning salt, cumin, garlic powder, salt, pepper and paprika.
- 1 cup of semolina (oat flour or regular wheat flour will work too)
- 1/4 cup sesame seeds
- For the Tahini Sauce:
- 1/4 cup of tahini
- 3-4 tbsp of water
- 1 tbsp lemon or lime juice
- 2 tbsp maple syrup
- 1 tbsp spices of your choice (we used the same as the patties)
- Toppings:
- Baked yams, thinly sliced
- Roasted cauliflower
- Fried mushrooms
- Avocado Slices
- Tomato slices
- Pickles
- Lettuce
- Ketchup and mustard
- Burger buns
Instructions
- Combine the walnuts, beans, cauliflower, cilantro, celery, onion, garlic clove, zucchini and spices in a food processor until combined. In a bowl, add the semolina and sesame seeds and mix well with a spoon.
- Take a small fistful of the burger patty mixture and spread it thinly for each burger. Use olive oil to lightly grease a baking sheet and lay each patty flat on the sheet. They should be about the width of your pinky finger. Bake at 400F for about 15 minutes, flipping halfway. Once finished, let them cool.
- For the sauce, add everything to a food processor and combine. You can also use a small blender or a fork to mix the sauce.
- Lightly toast a burger bun. Layer in this order: bun, mustard, lettuce, two patties, baked yams, avocado, roasted cauliflower, pkcles, tomato slices, tahini sauce, ketchup, bun.
- Makes about 12 burger patties (about 6 burgers)
