Greek Quinoa Salad

This salad is the perfect Greek-inspired dish! The mixture of fresh crunchy veggies, crumbled feta and Greek dressing mixed with quinoa is a great option for a protein-packed lunch. Try this with friends for a potluck, or make a double batch for to-go lunches.

A delicious summer special with a quinoa spin on a Greek classic.
  • 1 cup uncooked quinoa
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/4 cup chopped olives
  • 1/4 cup chopped green bell pepper
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 2 tbsp olive oil
  • 1 tsp red wine vinegar or apple cider vinegar
  • 1 tsp lemon juice
  • 1 tsp of dried oregano
  • Sea salt, cracked pepper
  1. First, Cook the quinoa as per directions on the package.
  2. In the meantime, chop all of the veggies.
  3. Once the quinoa has cooked and cooled, mix all of the ingredients together, including the dressing. Top with more dried oregano if desired and serve cool. Enjoy on its own or with some warm pita bread and tzatziki.

    I am so in love with Quinoa!

    I make these awesome Mexi Bowls with mexican chicken and quinoa- so much better than the rice version.

    My trick is to cook the quinoa in chicken stock to add a bit of flavour!

    That salad looks delicious! I’ll have to pick up the ingredients next time I’m at the grocery store. I love those greek flavours and I can’t get enough feta cheese!

    I never tried quinoa, but this salad looks so yummy! I have to try it!
    I’m not a huge fan of peppers to be honest but I’ll give it a try! 😀

      Enjoy your posts, but one small irritation. . . . they are blurry and pale in the middle of the scroll and become clear only at the end of the scroll as they are just disappearing from sight at the top of the screen. I can never see a whole image with full image quality, only about half of an image. Is there something I’m doing wrong?
